Overview#

Hong San Duo is a famous dish from Yunnan. Yunnan cuisine emphasizes cooking with freshly picked vegetables, which are not only exquisite and easy to prepare but also healthy and delicious. Hong San Duo refers to tomatoes, red pork, and red peppers, named for the three reds. The stir-fried Hong San Duo uses fewer seasonings, and the selected peppers are not spicy; it mainly relies on the aroma of the tomatoes releasing juice and combining with the meat, making it quite tasty when mixed with rice, with a sour and fragrant flavor.

Steps#

  1. Marinate the pork
    • Add half a spoon of salt, half a spoon of pepper powder/13 spices, one spoon of cooking wine, and a small amount of soy sauce to the minced pork. If you have ginger, add some minced ginger.
    • Add a small spoon of starch (to make the meat tender, enhance color, and improve texture)
    • Mix until no dry powder is visible
    • Add one spoon of vegetable oil (to lock in moisture and flavor)
    • Marinate for at least 10 minutes
  2. Cut the peppers
    • Cut into strips and then into small pieces, or chop directly
  3. Cut the tomatoes
    • Make a cross cut, then blanch in hot water to remove the skin (omit if you find it troublesome)
    • Cut into 1cm cubes
  4. Prepare wet starch
    • One spoon of potato starch
    • Appropriate amount of water
    • Mix well to prepare for thickening
  5. Heat the pan with cold oil, add the minced pork
    • Stir-fry on high heat, breaking up the pork and changing its color
  6. Add the chopped peppers
    • Stir-fry until the peppers are cooked, releasing the aroma of the peppers and minced pork
  7. Add the diced tomatoes
    • Stir until water and red oil are released; if you feel it lacks flavor, you can add some ketchup
  8. After the red oil is released, add a little wet starch water to thicken
  9. Plate and serve
